Hello Saturday, I am glad to see you!

Fridays are always kind of hectic for me. I take Jr to school in the morning, rush home, get ready and leave to take my husband to work and hope I get back in time to pick Jr up from school. Thank goodness my mom lives across the street from the school so on days I get stuck in oh so wonderful LA traffic she can get him. Luckily yesterday was very light traffic. I even had time to stop and get lunch with my little one's. I rarely eat hamburgers but I was craving one so I stopped at In-N-Out. Can you say yummm!

Mmmmm....animal style, it's the only way to go.

I managed to get to Jr's school at 1:41, perfect timing since he gets out at 1:55. We headed over to the library afterwards. The kids love the library. I think I scored some good reads for them. I got two Dr Suess compilation books and Cloudy with a chance of meatballs! Jr picked out this encyclopedia sized books on trains, planes and automobiles. He is just like his Daddy. After the library we headed over to Walmart to get supplies for my party I was supposed to be hosting when I noticed Samantha's eye was watering and red and, yup, you guessed it, lots of yucky yellow goop coming out. Of course it was 4:15 and her Dr left at 4:30 so off to Urgent Care it was. I wanted to get there as close to 5 as I could because they start check ins at 5 and start seeing patients at 5:30, so the earlier we got there the better. After running home and literally throwing the groceries in the fridge I ran back out.
When we got there I put little man in the stroller, grabbed baby girl and Jr man and ran to go check in. Yes we were literally running there. I got inside and not two seconds later heard a loud smack then screams. I turned around to see Samantha laying on the floor crying! She had run right into the corner of the door frame.

"Look mom I have a goatee". Hey they gotta keep themselves entertained some way right LOL

And look how fast it grew!

So three hours later we left with a confirmed diagnosis of pink eye, a clean up and pretty Hello Kitty band-aid on her chin and of course her ear infection that she was just diagnosed with the day before.

So this was my eventful Friday. We didn't end up getting home until after 7pm, just enough time to feed the kids and climb into bed.

Macaroni and Cheese please!



I don't know about you, but to me there is no better comfort food then good ole Mac & Cheese. I'm not sure why I've never attempted to make it myself. I always see recipes and literally drool just looking at them. Guess I'm unconsciously trying to eat healthy. But this was my first time doing Easter dinner all by myself and not going anywhere so I said I'm going all out baby! So here we go!

Macaroni & Cheese
Makes 8-10 servings

6 tablespoons butter
1/2 cup finely chopped onion
1/4 cup plus 2 tablespoons all-purpose flour
4 cups whole milk
2 teaspoons dry mustard
1/2 teaspoon salt
2 cups shredded sharp Cheddar cheese
2 cups shredded white Cheddar cheese
2 cups shredded Parmesan cheese
1 pound elbow macaroni, cooked and kept warm

Preheat oven for 350 degrees. Spray a 13x9 inch baking dish with nonstick spray.
In a large pot melt the butter over medium heat. Add onion and cook for approximately 5-6 minutes or until the onion is tender.


Add flour, stirring constantly and cook for approximately 2 minutes. Gradually add your milk, stir constantly and cook for approximately 5-6 minutes or until mixture starts to thicken.
Remove from heat and stir in your dry ingredients (dry mustard & salt). Now the best part! Stir in your cheeses. Stir until all the cheese is melted and the sauce is nice and smooth.
Add in your warm macaroni, stirring gently to combine all the ingredients.
Pour the ooey gooey mixture into your coated baking dish and bake at 350 degrees for 30-40 minutes or until the casserole is hot and bubbly.
Let stand for as long as you can resist digging in because you will burn your tongue! And trust me it hurts. I would say about 10 minutes would be good on cooling down.

I know my pictures are crappier then normal, I had to use my point and shoot since my Nikon is temporarily out of service :( But as you can see this macaroni came out perfect! It was a hit at dinner and all the left overs have already been eaten. I really enjoyed that although three strong cheese flavors were used the taste was very smooth and subtle. The Parmesan added a little bit of saltiness to each bite which is better then salting your macaroni, who does that! But there weren't any overpowering flavors to this dish. It is definitely a keeper!

So much for that

I came on here to post some pictures of my baby girls very FIRST hair cut and my camera erased ALL my pictures. I called my husband crying. Yes I am crying over pictures. I am a picture freak and I like to document everything. Especially my kids firsts. The first hair cut may seem insignificant to some but it's important to me and I am so sad that I don't have any pictures to share with her when she is older or my friends, family and followers here.
This isn't the first time my camera has done this either. I almost threw my camera I was so upset. Thankfully I didn't because I am crossing all my fingers and toes that my husband can recover some if not all of my 130 or so pictures I had on there.
This is all I have right now is this picture I took from my phone, but it will have to do.

Randomness, it's the story of my life

If anyone knows me I am not a planner, I don't have a daily routine (so to speak) and I am a very random person. My thought process is very random too LOL it's one of those things that makes me me. So today I was sitting here pondering what to write about and it hit me, why not write about me, well what it is to live my life. So here we go.

MOMMMMMM! That's how my mornings start. I slowly drag myself out of bed. I used to be a morning person but I also used to go to bed at a decent hour so without my coffee I am a little slow to start off. My daughter runs into my room and tells me to get her brother, that would be the one yelling mom and Jr is running at full speed to the bathroom. It's the same scene every morning and yet I wouldn't change it for the world. Now that the weather is starting to warm up I have been bringing the kids outside letting them run around like crazy and getting some time out of the house. Of course my camera is a perma fixture in my hands when were out playing. I wouldn't be the picture freak if that weren't the case. And yes people call me that because I have over pictures!

Speaking of pictures here's a few I took the other day.

My husband isn't a fan of this picture. He doesn't like that the tree is standing up straight but I think it gives another dimension to the picture. I'm not a fan of all pictures being straight and boring.
Here's my big boy (Jr) reading his part during Passover dinner on Monday night. He was so cute and so shy my mom helped him out a bit.


After everyone left I watched as Shawn walked down the hall and I glanced up at the picture of me from when I was 21 months, almost exactly the same age as Shawn right now and knew I had to HAVE a picture of him and that picture! I've always heard my kids favor me, well at least when they were younger but I think Shawn might actually be my mini me. Especially the hair! Can you believe I used to have hair like that. And wow his hair is lighter then mine was.

My husband works weekends so were not like the typical family in doing everything then. We try to do things during the week when he's home and not in school. Right now it's working out good since Jr is on spring break. Gives us more time to do things with everyone and not leave Jr out. I love that Jr is in school and that he is also loving it but I miss my baby boy :( He's growing up so fast and in a short time he will be in FIRST grade! Ack. Oh btw I am so proud of him. He didn't go to preschool and was struggling a bit when he first started school but I got his report card last week and he has a 97% in his class! Go Jr!!!!

I'm sitting here right now and my little princess saw that I was looking at her so she instantly changed from happy to I want mommy and I'm going to pout about it now LOL She knows how to work the system. Well I think that was enough rambling for today. I'm going to watch Mulan with my chitlens and enjoy our day together.
