Chicken, Cauliflower & Mushroom Pasta Recipe


I had originally picked this recipe to make for dinner last week because it looked like it was semi healthy, but then I started cooking it and as the cream cheese melted into this gorgeous white cream sauce I instantly felt guilty. So to make myself feel better I added Parmesan Cheese. Hey, don't judge. I eat my feelings sometimes...so what. But if you want to omit the Parmesan it will still be just as fabulous and you wont feel as guilty as I do right now. Yup.


Chicken, Cauliflower & Mushroom Pasta

Ingredients

12oz box of Vegetable Pasta
2 Chicken Breasts
Fresh Spinach-as many handfuls as you'd like
8-10 Mushrooms, sliced
Extra Virgin Olive Oil
1 teaspoon of Garlic
1/4 head of Cauliflower cut into bite sized pieces
2/3 cups cream cheese
1/2 cup of Parmesan Cheese
1/2 tablespoon fresh squeezed lemon juice
1 cup chicken broth
Oregano
Basil
Onion Powder
Cayenne Pepper
Salt & Pepper

Directions

Boil 4-6 cups of water for your pasta
While you wait for the water to boil thinly slice the chicken into strip. I typically cut the breast in half then slice from there. It's almost like you get twice as much that way (almost).
Preapare all of your veggies. The spinach is really easy to cut if you roll up a bunch and slice it.
The mushrooms I leave slightly big since it's the kids favorite part of the meal.
And the cauliflower should be a wee bit smaller then bite sized.
Now that you have the prep out of the way lets start cooking!
Start cooking your pasta
Cook the chicken on medium-high heat in about a teaspoon of olive oil. Once cooked set the chicken aside and use the same pan for your veggies.
Start with your cauliflower since it will take the longest to cook, then add in your mushrooms and garlic.
Now it's time for the goodness, the cream cheese. Just plop it in but make sure to turn the heat down so you don't burn it. You want to slowly melt it so it's becomes a creamy sauce.
Slowly add in your chicken broth and stir
Add in all of the seasonings to taste
And lastly your lemon juice, spinach and Parmesan cheese.
You can squirt more lemon juice over your pasta if you find the 1/2 tablespoon isn't enough. It's always better to follow the less is more rule with lemon because you can't take away the lemon juice if you put too much on but you can definitely add more if you'd like to.
Give it all a good stir and stir on top of your pasta, or you can mix it all together to coat your pasta.

First Day of School

First day of school! Wake up! Come on. First day of school!! Sorry, I couldn't help myself from a little Finding Nemo quote, especially since this was pretty much how our first day went. I had my alarm set for 5am and the kiddos came running in at 4:54am telling me to get up! Darn them for not letting me get those last six minutes of sleep.

To say the kids were excited would be an understatement. There was no nervousness and no worries, just pure excitement. The first day of school is always so magical and I will never tire of seeing my babies excitement over learning. Enough rambling and onto the good stuff....the photos.

I still can't believe my baby, my first born is in 4th grade!
Or that my baby girl is in 1st!
I especially can't believe my last born is in Kindergarten


Three kids, all in school, full day and it's still so surreal to me. I knew this day was coming, I've been gleefully excited about it and now that it's here I'm a wee bit sad. My babies are growing up so fast and it's wonderful and sad at the same time.

BlackBerry Q10 with Verizon Wireless

I have been using the new little BlackBerry Q10 for a few weeks now and I gotta say it's definitely a learning process. I haven't used a push keyboard in a long time, four years to be exact. The last push keyboard I had was my LG slide phone and while that phone was awesome it had it's drawbacks.
Getting side tracked, I am not here to reminisce about past phones, I'm here to fill you all in on the BlackBerry Q10.



So far I have to say the size, well it has it's good side and it's bad. Okay maybe not necessarily bad per say, more like a downside of it. Here's my thoughts.

Good:
I really love the compact size because just like every thing else everyone thinks bigger is better. That is not always the case and this phone is a perfect example of that. It's a rocking little phone and just using it once it will prove it to you.

Bad:
The downside, I'm so used to bigger phones that just getting used to the smallness of it, especially the screen is an adjustment. But the most important thing is the size of the phone doesn't take away from how powerful it really is.

I am looking forward to brining you more updates and sharing my thoughts on this sweet little phone.

Back to School Shopping with Old Navy

In total we got 10 t-shirts and two pairs of jeans. The Avengers shirt was $10 and Darth Vader shirt was $7.99 the rest of the t-shirts were all from the $5 section, the jeans were on sale for $10 (that's half off people) and since it was tax free weekend I saved there AND they had a spend $50 get 10% automatically taken off your total special running. All in all I only spent $70 and I saved $70. Having a big chunk of my kids wardrobes for school done and ready to go is a huge relief off my shoulders and one of many reasons that I love Old Navy. I mean seriously, where else can you get such cute, affordable and versatile clothes.

5 Reasons I Will Not Be Seeing Elysium

Since the first moment I caught wind about this movie it has put me off. Call me judgmental (I prefer opinionated but potato po-tah-toe) but it just bugs me. It's the same as when you get those gut feelings that something isn't right or something will go wrong, I have them about movies sometimes. Totally normal people.


Let me count the reasons I will NOT be seeing this movie.

1. At first glance all I can think of is um hello Matrix ripoff much?
Seriously even in this brief three minute video all I see is Matrix references. End of world type scenario, the elite run the world (machines run the world). Alone, one man must save the world.



2. The whole plug, camera, AI, whatever that is in the back of the head?

Okay so maybe it's the whole Matrix similarities that are bugging me so much about the movie and I should just change this to the one reason I will not be seeing this movie, it is a reason for me, but the biggest similarity that is painfully obvious??? A GIANT plug in the back of someone's head!

3. Matt Damon

No matter how awesome of an actor he is, he is not a badass...I repeat he.is.not.badass. The being covered in tats while I normally find insanely hot but uh yeah not on him. Don't get me wrong, I'm not totally hating on Matt because he has that boy next door cuteness to him and he does have some good movies like Dogma, that was an excellent movie, Chasing Amy was another good one, Glory Daze, Oceans 12 I just find the character very out of his realm.

4. Because of reason three I find his whole character a little comical and I just can't take him or the movie seriously.

5. Jody Foster

I'm sorry to all the hardcore Jody fans but she's always irked me. I am not a fan of her acting. I know she's been around for ages (not knocking her age cause that would just be rude, btw she does look fantastic in the trailers) and has gotten many awards and she is beloved by her people, I am just not one of those people.

There you have it folks, my five reasons on why I will not be seeing this movie.

Whole Wheat Blueberry Muffin Recipe


This past weekend after we all went out to dinner as a family I grabbed the boys and ran across the parking lot away from our truck and over to Barnes & Noble. My husband thoroughly confused got in the truck and pulled up along side me asking what the heck I was doing. I am very random like this, you'd think he's be used to it by now LOL and I had been stuck inside all day and wasn't ready to go home so I wanted to browse some books. Hence running like a maniac over there. Makes perfect sense right? Why am I telling you all of this useless knowledge? Because it led to me buying two recipe books. They were on sale so I couldn't pass them up. One of the books I picked up was Veggie Kids, a book specifically for vegetarian children. I love veggies and so do the kids so it's as if the book was calling my name. One of the first recipes I came across was for Blueberry Muffins and I knew I had to make them. But trying to stear away from white flour and trying to go for overall healthier options I changed it up a wee bit to call it my own.

Whole Wheat Blueberry Muffins



Servings:
16 muffins

Ingredients:
3 1/4 cups whole wheat flour
1 cup sugar
1 1/2 tablespoon baking powder
1 1/2 sticks of country crock butter
1 egg
1 egg yolk
2/3 1% milk
Grated rind from one Lemon
1 1/2 cups FRESH blueberries (none of this canned stuff here people)

Directions:
Preheat oven to 400 degrees and line your muffin tins with paper liners
In a large mixing bowl combine your flour, sugar and baking powder
Rub the butter into your dry ingredients (don't laugh but you want to kind rub/roll it in as opposed to mixing/squishing it in so it looks still clumpy)
In a small bowl mix the egg, yolk, milk and lemon rind
Pour the egg mixture in to the large bowl of dry ingredients along with your fresh blueberries and GENTLY mix the ingredients together until everything is combined into a nice dough
Take a semi heaping tablespoonful of dough and fill each cup.

Bake the muffins for approximately 30 minutes. Mine cooked for exactly 30 minutes and were cooked to a perfection but different altitudes may require different cooking times.

*Note...If you are looking for those super sweet muffins like the one's you would buy in the store prepackaged and full of crap these are not them. These are fresh homemade muffins where most of the sweetness you will get is from the blueberries since it's not drowning in sugar. I personally enjoy these much more then store bought one's. And seeing as my kids already devoured six of them I am going to say they agree with me.

*Tip for the lemon rind...we all know how annoying it is to go through all that work only to find a pea sized amount of rind on the grater. Take a fork or knife and slide it in between the grooves to get out some of the rind that is stuck. You can also lightly tap it on a cutting board or on a paper towel on the counter to get more of the rind loose.

Wordless Wednesday-This kid


This kid, I LOVE him. I could just leave it simply at that, but I just have to add that this kid is my world. He's one of the most amazing little dudes I know. He has the personality like no other, a laugh that is contagious to all, a smile that is all trouble, and he gives the best cuddles. I love this kid!


Quick explanation....I woke up to find both the kid and the dog had snuck into my bed some time during the night. The first pic you can only see his bum sticking out from under the pillow. This adorable swollen eyed smiley face, I get to see it every morning. It hasn't changed in five years, he always waked up just like this.

See's Candies now open in Penn Square Mall, OKC


The other week my daughter and I had the honor of attending a pre Grand Opening event at the See's Candy in the Penn Square Mall.  As soon as I stepped foot into the store I may or may not have done an inner squee. The saying "just like a kid in a candy store" stands true for adults too you know. There's something about stepping into a See's Candies store and smelling the chocolate (oh my gosh the chocolate) and seeing the classic black and white tiled floors that brings out the inner child in every one. As if they knew what we were all thinking we were given a chance to take a peek behind the counter, and get this, we did packing races! Lets just say I now know how to efficiently (not speedily) pack a 12 count chocolate caramel marshmallow box of candies.   It was a lot of fun watching everyone try to figure out how exactly to get the little papers that the candies sit in separated with one hand AND not touch any of the candy with your hands, it was a fun process but also educational in learning that they don't actually touch the candies and that they actually inspect each box to make sure it is up to their standards before it can be sent out to be sold.


While there we got the opportunity to learn more about the company and let me tell you they are a company deep with history. I knew See's was a company with many years behind them but knowing there was a story to those years makes it makes it all that much more special. Here are a few interesting tidbits I learned during our visit:

1. See's sells over 26 million pounds of candy every year!
2. In addition to the 26 million that they sell they give away approximately 1 million pounds in samples.
3. Every single person who walks through the door has the option to receive one sample of candy.
4. The first See's Candies shop was opened in 1921 in Southern California.
5. They have two factories in California. One in Burbank (which I have driven by so neat) and one in San Francisco.
6. See's Candies was started by Charles See the son of Mary See who's picture hangs in every See's Candies store.
7. They still make a few of Mary See's original recipes from when she first started baking such as the fudge.
8. See's uses no added preservatives in their candies.
9. They now offer Gluten Free options.
10. The LollyPops are made in a different factory then the chocolate candies so that along with the chocolate drops are the only candies that they can guarantee are allergy friendly.
11. The chocolate drops is the same chocolate that they cover their candies with.
12. See's employees are AWESOME! Seriously they pour their heart and soul into their job and love not only what they do but the company they work for.
13. And my favorite little tidbit they shared was that the scene in I Love Lucy, you all know which one I'm talking about right? The one where she's in the candy shop trying to keep up with packaging the candy along the assembly line and she get's so overwhelmed in the classic Lucy fashion that she starts shoving her face with chocolates? Yeah that one! It was filmed in the Southern California facility.



Okay so I learned a little bit more then just a couple of things but it was all so fascinating to me I just soaked it all in. I've always been a See's fan. I still remember going into a See's store as a little girl and walking out with a chocolate LollyPop in hand. I want to personally thank Adam, Jermaine, Diana and See's for allowing my daughter and I to take a peek inside the magic behind your wonderful company.

Weekly Meal Plan 07/28


I am attempting to jump back into this (again) and what better way then at full speed? Might not work for some but unless I jump in like this I will fall right back off the wagon. So fingers crossed I last longer then a month this time!

I am still piecing together which meal we should have on which day but this is the menu I've come up with so far.

Some type of chicken dish that I haven't decided on yet

My grocery list is pretty long for these meals because my fridge is pretty bare right now so I don't have anything on hand. I've been sick and cooking has been the last thing on my mind, same with shopping. So tomorrow will also be a restock shopping kind of day, yippee.

Cheese (I only buy reduced fat sharp cheddar. Still the great taste with half the fat. I should be in commercials.)
Cream Cheese
Onions
Zucchinis
Red Bell Pepper
Leeks
Tomatoes
Lemons

Cannellini Beans
Cabbage
Lime

Penne Pasta (I get the veggie kind, gotta sneak as many veggies in as I can)

I think that's about it plus a few odds and ends like bread, salad dressing, beets, hearts of palm, coffee creamer and fruit, can't forget the fruit!

The nice thing about the fish tacos and the soup is that they share a lot of the same ingredients so that cuts down on the cost a bit and my husband already purchased fish so I wont need to purchase any more of that. FYI fish out here is 1) very expensive and 2) the selection sucks. If you are lucky enough to have a Trader Joe's near you I highly recommend checking their fish selection out. They are very reasonably priced and have a very decent selection.

These clips are a lifesaver for my kiddos since every time we see the commercial my youngest says to me "Hey Mama that's the movie you talk about, can we watch again"? The Hunger Games: Catching Fire new posters & Trailer


The 75th Hunger Games Quarter Quell has been declared!
 
On the 16th of July it was officially announced on Lionsgates Facebook page that every quarter century, the Capitol honors the anniversary of its victors over the districts with a special edition of The Games. For the first time in history the favorite Victors, Katniss Everdeen and Peeta Mellark will return as this years Tributes.
 
In honor of Lionsgates big announcement they released new Quarter Quell character posters for the wildly anticipated sequel, The Hunger Games: Catching Fire! Here is a sneak peak of a few of the posters that were released.


 

 




And because I know you've been waiting for it, here is a brand spanking new trailer for The Hunger Games: Catching Fire.


 
The Hunger Games: Catching Fire opens in theaters nationwide November 22, 2013! I know I was late the the Hunger Games club but I am making up for lost time here. I cannot wait to see this movie. I especially love seeing Donald Sutherland as such an evil conniving man which is not his usual forte.

Captain America: The Winter Soldier


I give to you Captain America: The Winter Soldier new teaser poster. I know I know I am so mean only showing you a poster but when I got this in my email I totally squeed because dude this mean Captain America will be back! Yes I am a total fan girl of Captain America, hello Chris Evans YUM!


Okay enough gushing. The new poster above shows the famous Captain America shield with scratches on it, paint chipped off, is that blood on there? Either way the infamous shield is noticeably beaten up. Can this mean that there may be a darker tone to the sequel? That may be the case as from what I can tell about the movie is that Steve Rogers struggles to embrace his role in the new modern world of today. Together with Natasha Romanoff, the Black Widow (Scarlett Johansson), they battle a powerful and dark enemy.  The Winter Soldier, an assassin who just so happens to be his best friend Bucky Barnes (Sebastian Stan) who has been brain washed.


So much we still don't know, but one fact we do....April 4th 2014 Captain America will open in theaters and you can bet your bottom dollar I.WILL.BE.THERE!

Get outside & play with Coca-Cola's #TakeItToThePark

We love the park. And when I say WE I mean all of us, yes that most certainly includes myself. I love watching the kids have fun and seeing their smiling faces brings me joy. Knowing that I can sit for a minute and relax while they go play to their hearts content is an truly awesome thing. And something a park adds extra value to because you're almost never the only person there. It's very rare occasion for to be no other families also at the park doing the same exact thing. One of our favorite parks out here is what the kids call "The Wolf Park" but to us adults it is more commonly known as Reeves Park. One part of the playground has a wolf head hence them calling it the Wolf Park. I didn't snap a photo of it this time but I have in the past. It's actually pretty neat. Another thing I LOVE about this park is it's all wood. Well excluding the slides and swing set seats of course.


Prior to moving here and going to this park I had never before seen a park made entirely of wood. Heck I don't think I had ever seen a park made with any wood before. Everything was all metal or wood. So this park is extra special for that reason. Also it is completely fenced in. There are two main sections to the playground. The older kids and the wee kids. Each of them are fenced in (you can see the fence in the background in the photo above). There are two entries/exits. Both on the same side of the playground so you can't miss if your child runs out. Having that little added security feature is really important to me since my youngest is still a bit of a runner. One last thing I'll mention....TREES! A park is not a park if it doesn't have trees. They provide many functions but most importantly on an extremely hot day they provide shade! For all these reasons and more is why I love taking the kiddos to this local park. Since the first time we went we knew it would become a favorite park of ours and even though we've been countless times it's still awesome each time we go there.

Coca-Cola recently introduced the America is Your Park campaign. The idea behind the campaign is to help bring people together to improve the health of their communities. And with the start of the campaign the hunt is on to find Americas Favorite Park! Now here's the special part, the park that wins 1st place will receive the title of Americas Favorite Park AND a $100,000 recreational grant which can be used for improvements to the park. The 2nd  place park will receive $50,000 3rd place $25,000 and the there will be a $15,000 wildcard grant that will be awarded to a randomly chosen park from the remaining 25 spots on the leaderboard! Another thing I love about this campaign is anyone can put together their own park meet-up and make things happen! If you are interested in doing your own meet-up but need a little help they put together a great checklist filled with ideas on how to make your outdoors day a success. You can view the page here.

This is the part where I shamelessly ask a personal favor of you all. The park that is currently in the lead with 147628 of the votes (as of July 4th) is the the Veterans Memorial Park at 1900 SE 4th Street, Moore, OK. During the May 20th tornado it was destroyed. I would love to see the park rebuilt not just for the children but for the city of Moore as a whole. Moore has a long way to go until it's fully rebuilt and how amazing would it be to start with a place where community comes together to play, interact with each and overall come to have a fun time. Please excuse me

Please excuse the current state of affairs on my site. Things are just a wee bit messy in my attempts to transfer to WordPress. Yes, I finally caved and let everyone talk me into making the switch. BUT it's a step in the right direct and one I can't turn back from sooooooo things may be a bit wonky but we're working on it and hopefully by the end of the week we will be fully functioning and back in business!

As for my giveaway that I have up right now, I know the links got a screwed up so I will more then likely extend the end date to give you all a chance to enter.

Official Trailer Debut of The Delivery Man


That moment when a guy finds out that he is going to become a father is a special moment, one they will probably never forget, but not everyone has the same experience. Like when David Wozniak (played by Vince Vaughn) finds out that he's not the father of 1, 2, or 3 children but 533 children!



Yes you read that right, five hundred and thirty three kids! Thanks to a mishap at a fertility clinic 20 years ago David Wozniak unknowingly became the proud Dad to all of these kids. And now 142 of those children are suing to reveal the identity of their birth father. What is a guy to do with this news? Have a panic attack, go m.i.a., come forward? No, what he does is truly amazing, heart warming and inspiring. He secretly becomes kind of like a guardian angel to these kids. There to provide support and encouragement should they need it. If I am making zero sense watch this brand new trailer that was just released...right now!



I told you, heart warming right. But I seriously love the comedic value they brought in along with the serious side of the story. Example....Chris Pratt is hilarious! The clip where he is just sitting there as his kid is just smacking his face talking non stop.....go on admit it, you've totally had one of those moments, I know I have....a lot more then once in fact LOL And I don't know why but it is always more comical watching moments like those happen to Daddy characters for me.
